The only flavors of the paraense kitchen are well in the gastronômico heart of São Paulo, the quarter of the Beautiful Sight, the celebrity Bixiga de Adoniran Barbosa and of the Italian canteens. A marcante counterpoint, a genuinely Brazilian enclave in the redoubt most Italian of Brazil. With its crossbred flavors, deriving of the singular combination of the indian, the African and the European, the Amazonian culinária is represented in São Paulo since 1995 for chef Pablo Leite, that it directed the Tucupi (95 the 2002), the Stamp (2002 the 2005) and now leads Amazônia, opened in August of 2008 in the Street Rui Barbosa, 206, to the side of the Cê canteen That Sabe, in front of the theater Sergio Cardoso.
The Amazônia is dedicated to the paraense culinária of root, and in the words of the Josimar critic Melo, of the Leaf of São Paulo, “singela comes back with same the proposal: but to show the kitchen of its region. It does not have inventions or interpretations, it does not have immense menu (what it creates some gaps): but what it has valley the visit. They are juices and strokes of fruits as cajá and cupuaçu; the reconfortant solp of crab (it also can be of piranha); intense and revigorant tacacá (with everything the one that has right: broth of tucupi, cassava gum, leves and leves of jambu, dry shrimp); fish as pirarucu and tambaqui (of this, even so either offered costelinha, what it comes is one filé), prepared in the plate; maniçoba (meats of pig and bovine in the cassava leaf folder); e, clearly, duck in tucupi.”
